Nicholas Ganea opened Sauce Nouvelle after several chef stints at restaurants around the country including NY, and Chicago. He landed on Bainbridge Island after his friend introduced him to the owners of the Winslow Mall, and decided it was the perfect spot to start his next adventure.

Formerly a retail space, Sauce Nouvelle was transformed into an open space cafe with clear sight lines of the kitchen. Tables and chairs are located outside for customers that want to linger over their meals.

A rotating menu features sandwiches and salads elevated by innovative sauces inspired by local PNW ingredients such as a peach parsnip romesco or PNW Rainier cherry sauce. A standout sandwich on the menu is the Rainier Cherry Roasted Beef with garlic aioli, pickled red onions and arugula on a ciabatta roll.

Sauce Nouvelle is located at 278 Winslow Way E #109, Bainbridge Island, WA 98110 Wednesday – Sunday from 11am – 3pm.
