According to a recent permit filing, the creators of MariPili Tapas Bar will open a new venture called MariPili Cafe at 704 Terry Ave in the Yesler Terrace area.
A representative of MariPili Cafe was not immediately available for What Now Seattle’s request for comment.
While an official opening date has yet to be confirmed or what MariPili Cafe will specifically offer, Maripili Tapas Bar opened only about a year or so ago on Capitol Hill. MariPili Tapas Bar has been described as a place where the flavors of Spain come alive and was created by the expertise and passion of Chef Grayson Pilar.
Her culinary journey began at a young age, learning the intricacies of cooking from her abuela, instilling in her a deep appreciation for the nostalgic delights of Spanish cuisine. For those that are unfamiliar with the meaning of abuela, when translated into English, abuela means a person’s grandmother.
The inspiration for the restaurant’s name, MariPili, comes from Grayson’s own family, paying homage to her aunt, MariPili. As reported by The Seattle Times, Chef Grayson’s recent return from Spain prior to MariPili Tapas Bar’s opening, where she apprenticed at the esteemed two-Michelin-starred restaurant Culler de Pau, brings an exciting blend of Spanish authenticity and Pacific Northwest creativity to MariPili.
In addition to the time spent at Culler de Pau, Grayson also was once a pastry chef at JuneBaby, described as a place for classic Southern fare made with heirloom ingredients is served in a stylish locale with cocktails, according to Google.
Among some of the menu offerings of MariPili Tapas Bar are Dungeness crab croquettes and a variety of Spanish dishes prepared with the finest locally-sourced ingredients. Prior to MariPili’s takeover of their Capitol Hill location was Cafe Presse.
