A new chicken shop concept is soon hatching in Romeoville.
Hatch Chicken Co. is a concept location opening at the REBEL Convenience Store, 1300 Normantown Road. This was once a Dunkin’ location, and according to the Village of Romeoville’s press release, construction is set to start in June. The opening is slated for September, and the restaurant is currently going through the permit process.
“It’s great that Romeoville is being included in the initial wave of buildouts, and we look forward to welcoming them to the village,” said Romeoville Mayor John Noak.
The menu will have chicken tenders and sandwiches, as well as sides of biscuits, mac and cheese and waffle fries. For drinks, there will be organic teas and lemonade. The current location in Las Vegas also has a breakfast menu with bacon, egg and cheese or biscuit with sausage, egg and cheese sandwiches.
According to the press release, the restaurant will be using the drive-thru window once used by Dunkin’. Orders can be made online once the website is set up.
The current Hatch Chicken location in Las Vegas opened in 2024. This new location will be a subsidiary of REBEL Convenience Store, which is owned by Anabi Oil.
