Chef-driven fast-casual sandwich chain Mendocino Farms is wasting no time with its Colorado growth strategy. Right on the heels of opening its first store in the state, the business is moving ahead with plans for a second location. The brand’s website advertises an outpost at 3453 W 32nd Ave. opening in 2026.
Construction documents show the Highlands location involves a $800,000 interior buildout of a 2,683-square-foot space. The scope includes demolition of the current interior, constructing a new storefront and patio, configuration for a 54-seat layout, adding new kitchen equipment and HVAC systems, and various other upgrades.
Founded in 2005 in El Segundo, California, Mendocino Farms has expanded from its West Coast roots to Washington, Texas, and now Colorado. The brand’s mission is to offer an upscale spin on sandwich classics, using locally sourced, fresh ingredients.
Its flagship Colorado store, which What Now Denver announced last summer, just debuted earlier this month in Cherry Creek. And recent reports tease even further expansion, citing possible locations coming to Centennial and Boulder. Requests to the company were not returned in time for publication.
