Mendocino Farms, the fast-casual sandwich and salad destination that just recently entered the Colorado market, has Boulder on its list of initial target cities to debut in. As first reported by Westword, the company wants to open a store in the bustling town, which is known for its health-focused culture.
After launching its first restaurant in the state in Cherry Creek North last month, Mendocino Farms announced an aggressive growth plan that includes four more developments in high-traffic metro areas. What Now Denver covered the news of the Centennial and Highlands locations in the works, and another will be divulged soon.
A spokesperson for the business told the publication that the store is expected to open at some point throughout 2026. The team is currently in the site selection process to find the perfect spot in Boulder.
“Colorado has embraced Mendocino Farms with open arms, and we’re energized by the opportunity to grow thoughtfully in communities that value quality food and meaningful connection. Each new location will reflect the local environment while bringing our friendly hospitality and culinary creativity to the table,” CEO Kevin Miles told What Now Denver.
Started 20 years ago in LA, the eatery began as a neighborhood-centric sandwich shop inspired by local farmers’ markets. It has since grown to more than 70 locations in California, Washington, Texas, and now Colorado, its website states. It’s also entering the Chicago and Austin, Texas markets soon.
