Coffee, Potatoes & Thrifting Combine in New FoCo Concept

Spuds Lounge and Cafe is coming to town.

A new concept blending caffeine, comfort food, and community is on its way to Fort Collins, K99 reports. A local food truck owner is opening a unique new spot called Spuds Lounge and Cafe at 103 E Laurel St, just across from Colorado State University.

The eccentric venue, which touts itself as a student- and LGBTQ+-friendly hangout, will be a coffee shop that also serves loaded baked potatoes. It will host live music, DJ sets, open mic nights, and art shows, and all the furnishings and decor inside will be available for sale, its website advertises.

Behind the venture is chef and entrepreneur Seth Tatman. His food truck, The Munchie Machine, has served Larimer and Weld counties with burgers, cheesesteaks, wings, and specialty drinks since 2020. At Spuds Lounge, the menu will offer variations of potatoes.

I pride myself on making the highest-quality food, drinks, and snacks. My passion for cooking has led to over 15 years of professional kitchen experience—and even more years spent cooking just for fun,” Tatman told What Now Denver.

No opening date has been announced, but the business announced earlier this month that it had finally locked down a location. It’s accepting donations, both monetary and equipment, to bring the space to life, and is hosting a logo design contest for the lounge, running through August 1.
