Veteran Hospitality Couple Bringing Fast-Casual Greek Cuisine to Fairfax

Eleni and Angelo Linardakis are hoping to have Go GRK open before the end of 2025.

A family with deep ties to the local culinary community are preparing to bring the next evolution of Greek cuisine to the DMV. Eleni and Angelo Linardakis are applying the lessons learned from lifetimes in the industry to their new project, a fast-casual concept called Go GRK, set to open later this year, reports the Washington Business Journal.

Go GRK-pronounced “Go Greek” but stylized to avoid copyright infringement-will be occupying a 1,820 square foot space at 9013 Silverbrook Road. The restaurant will be quite a transition for the storefront, which previously housed a nail salon. Eleni and Angelo are giving the building a full makeover, which is both time and cost intensive.

The couple anticipate Go GRK primarily attracting customers interested in takeout, however the eatery will have seating for around 20 customers for those who won’t be able to wait to enjoy their pitas and gyro fries. Additionally, guests hoping to stock up on Greek supplies will be able to stop into a small attached market.

A precise opening date is not yet available, however Eleni and Angelo are hoping to be customer ready by November or December. The pair will wait until early 2026 if the work stretches to the holidays-a busy season for their other concepts, Spartans and Olympians.

Angelo’s goals for the restaurant are simple and admirable-and certain to appeal to local foodies. He states: “…if you want to come in and have a sandwich, or come with the family, it’s definitely a good place to come and eat.”
