Native Denverite to Open Café at FreshLo Hub

The business is part of an economic invigoration of Montbello.

A new locally owned coffee shop is brewing in Denver’s Montbello neighborhood. Ariel’s Café, operated by Denver native and entrepreneur Ariel Elliott-Dawson, will open soon on the first floor of the FreshLo Hub complex, according to city permitting records. The concept will be located at 12444 E. Albrook Dr., Suite 170.

The business will serve as a cornerstone of the mixed-use development’s retail and community space. Ariel’s Café was selected as the chosen operator through a competitive RFP process led by the Montbello Organizing Committee (MOC) in partnership with the Montbello Business Accelerator incubator-style program.

“This opportunity to take my idea from vision to reality has been an amazing and overwhelming experience,” shared owner Ariel Elliott-Dawson, a native Denverite and driven entrepreneur. “MOC’s incubator opened the door that made this possible. I’m beyond grateful and so excited to welcome the community into our coffee shop.”

Its menu will consist of coffee, smoothies, teas, freshly baked pastries, gourmet sandwiches, and breakfast burritos, the MOC website explains. It will be housed in a 2,939-square-foot space with an open seating layout. The occupancy limit is listed as 62.

A representative told What Now Denver the Accelerator and Ariel’s Cafe are both under construction, estimated to be completed first week of December, and the goal is to open in mid-January. The coffee shop will have three to four employees and will be open daily from 6 AM to 3 PM.
