Dinosaur Bar-B-Que’s journey began in Syracuse, New York, where it was founded by John Stage in 1983. It began as a modest stand on the side of the road, but soon became a renowned BBQ restaurant chain.

The restaurant is preferred by diners for its lively atmosphere and relaxed vibe. Its menu features pulled pork, beef brisket, ribs, and special sauces, slow-smoked over wood.

The brand has been featured on outlets such as Food Network and ABC World News, among others. The restaurant’s cookbook, Dinosaur Bar-B-Que: An American Roadhouse, was named one of the best BBQ cookbooks by the National Association of BBQ.

The closure news of the Brooklyn location quickly drew community reaction. Patrons reminisced about memories made at the restaurant and expressed sadness for losing a local go-to spot.
