A new seafood concept from Heong Soon Park is preparing to open inside Chophouse Row

According to a recent liquor license application, Sea’d In, a new seafood restaurant from Heong Soon Park, is set to open during the first week of July 2026 at 1424 11th Ave Ste D, inside Chophouse Row in Seattle’s Capitol Hill neighborhood.

The concept marks Park’s latest venture in the city, where he has built a diverse portfolio of restaurants.

Known for developing distinct concepts rather than repeating formats, Park has worked across a range of styles, with projects like Luna Park Cafe and Gol Mok Korean Market Bar, and continues to expand his presence throughout Seattle.

With this concept, the focus shifts toward a seafood-driven approach centered on process and precision. “At Sea’d In, we believe that the finest seafood isn’t just caught, it is crafted. We have stripped the modern kitchen back to its two most honest foundations: Time and Fire,” Park told Whatnow Seattle

The restaurant’s approach is built around dry-aging fish, a method more commonly associated with meat, paired with preparation over a custom wood-fired grill and oven. Inspired by Asian culinary techniques and the biochemistry of aging, the goal is to unlock deeper, more complex flavors in seafood that are still rarely explored in the Pacific Northwest.

The dining experience is designed to sit between elevated and approachable, offering what Park describes as a balanced atmosphere. “It is a total sensory fusion: upbeat energy, soulful music, and moody lighting, all centered around the irresistible scent of wood-smoke and exceptional cuisine.”

Beyond the concept itself, location plays a key role. “Chophouse Row feels like a micro-village tucked away in the heart of Capitol Hill. It perfectly balances the neighborhood’s historic, soulful roots with a sleek, modern sensibility, creating a collaborative home for independent businesses. I’ve always wanted to be part of this specific community, especially since Capitol Hill is where I first lived when I moved to Seattle. It feels like a homecoming.”

With Sea’d In, Park aims to contribute to Seattle’s evolving food scene through a new perspective on seafood.

“Seattle is defined by the sea, yet there is still so much of its story left to tell. My goal is to contribute to our city’s vibrant food scene by approaching seafood through my own cultural roots and personal history.”
