A Michelin-recognized New York restaurant and wine bar is set to open its doors in Denver this summer.
Soda Club, from restaurateur Ravi DeRossi and partner Drew Brady, will debut inside The Ramble Hotel at 1260 25th St. It will join DeRossi’s Death & Co. cocktail bar, also located within the hotel, according to a press release.
The team will transform the former Super Mega Bien space into “an intimate, moody, low-lit gathering spot” with seating for 70 indoors and 30 on the patio.
Derossi is a two-time James Beard Award semifinalist for Outstanding Restaurateur, while Brady has been recognized as one of Wine Enthusiast’s Future 40 Tastemakers.
Since opening in New York City’s East Village in 2021, Soda Club has earned the Michelin Bib Gourmand distinction four years in a row. The duo is eager to bring those flavors to Denver.
“When Drew and I were envisioning Soda Club, we were inspired by the relaxed European natural wine bars that function as true neighborhood spots, encouraging a convivial atmosphere where guests can gather over shared bottles and an approachable menu. When we decided to expand Soda Club, Denver was our first choice. It’s exciting to bring this vision back to my home state in such a vibrant location,” Derossi said in the statement.
The restaurant focuses on Italian cuisine, with a culinary program led by Executive Chef Amira Gharib, who helped launch Soda Club in New York City. It’s known for fresh house-made pasta, Roman-style pinsa made with long-fermented dough and ingredient-driven dishes.
Gharib, who is of Egyptian descent, draws on her background and culinary voice to shape Soda Club’s menu with a Sicilian-style approach.
“Sicilian food has an Arab influence that is very distinct from mainland Italy as Sicily has been a thoroughfare for other ethnicities for centuries. What we showcase at Soda Club is Italian but inclusive to the many cultures that have passed through the region,” Gharib said in the statement.
Alongside the food, Soda Club features an extensive wine program with more than 200 bottles sourced from small, independent producers.
A curated cocktail program rounds out the menu with inventive drinks including the “Soda Club,” made with January Spirits Genepy, lemon, cane and soda; the “Best Mistake,” featuring Select Aperitivo, Cocchi Rosa, Carpano Antica and sparkling rosato; and the “Grin & Break Even,” with Don Ciccio & Figli Ambrosia, limoncello, lemon and soda.
Soda Club is targeting an August opening. Once open, it will serve dinner nightly, staying open until midnight on weekdays and until 1 a.m. on Fridays and Saturdays.
