Olive & Finch Takes Flight at Denver International Airport

New Olive & Finch, Bar Finch and Little Finch locations are scheduled to open this fall.

Olive & Finch is expanding its footprint in Denver, bringing its fresh dining concepts to Denver International Airport later this year.

Chef and restaurateur Mary Nguyen founded Olive & Finch in 2013 and has since grown the brand into a multi-location hospitality collective with concepts across the city.

The first location will be at Concourse C West, which is near Gate C38. The concepts: Olive & Finch + Bar Finch, it will be side-by-side locations. This is expected to open in early September. 

Olive & Finch, will serve fresh breakfast, lunch, dinner, and snack options throughout the day. Bar Finch, will be a dedicated bar concept serving craft cocktails, local beer, wine, and spirit-free beverages.

Then, Little Finch will be at Concourse C East, situated near Gate C48. It is expected to open in early October. This concept is built for travelers on the move, with coffee, fresh grab & go options, and 24-hour convenience. Here there will be a curated menu of Olive & Finch favorites designed to get passengers to their gates on time, breakfast, lunch, dinner, and snack options available throughout the day.

“It feels like we are able to represent Denver and our brand on a global stage. It’s incredibly humbling and incredibly exciting knowing that you get to serve millions and millions of people every year,” said Nguyen. 

The Olive & Finch Collective has expanded across Denver, growing to five locations in Uptown, Cherry Creek, Denver Union Station, the Arts Complex and the Golden Triangle, alongside its Little Finch café concept on 16th Street and at CSU Spur.

The most recent opening was the Golden Triangle location in April this year.
