La Buvette Shiso, a new restaurant and wine bar concept, is getting ready to open in downtown Magog at 50 Place du Commerce.
The new restaurant is moving into the former home of Méli Smoked Meat, according to La Tribune. The project is led by Benjamin Pen, Charles Massicolli, and Dana Blumer, who also works as a market gardener at Parcelle Austin. The team is currently operating a soft opening while awaiting its liquor permit and tells What Now Montreal via email that the restaurant expects to be fully operational by July 1, 2026. Customers can expect a menu centered on pasta, fish, vegetables, wine, cocktails, and Quebec beers.
The concept was developed around the owners’ personal culinary interests and a desire to offer a smaller, more hands-on dining experience. Rather than focusing on a large-scale operation, the team plans to keep the restaurant intimate and highly personalized. Part of that approach includes chefs interacting directly with customers to discuss dishes and ingredients. The goal is to create a welcoming atmosphere where food and hospitality are closely connected.
Seasonality will play a major role in shaping the menu. Dishes are built around ingredients sourced from local farms and will change regularly depending on harvests and product availability. Customers returning throughout the year can expect new menu items and rotating offerings rather than a fixed selection. The restaurant’s website also notes that menus will continue evolving with the seasons.
The decision to use the term “buvette” reflects the team’s appreciation for the casual nature of a wine bar rather than a formal beverage program. While wine will be an important part of the concept, the beverage menu will also include Quebec beers and cocktails. The owners aim for an approachable experience that appeals to a wide range of customers seeking food and drinks in a relaxed setting.
