Gohan Bringing Japanese Flavors to Beacon Hill

The upcoming concept from Humble Pie owner Brian Solazzi will highlight Japanese cuisine with Pacific Northwest ingredients

A new Japanese restaurant from Seattle restaurateur Brian Solazzi is taking shape on Beacon Hill. Gohan, currently under construction at 2904 and 2906 Beacon Ave. S., recently applied for beer, wine, and spirits licenses with the Washington State Liquor and Cannabis Board. 

 

While no opening date has been announced, visitors can already sign up through the restaurant’s website for updates and invitations to preview events before the official debut.

The project marks Brian’s second restaurant. He also owns Humble Pie, the sustainability-focused wood-fired pizzeria he designed and built at 525 Rainier Ave. S. in Seattle.

An architect, contractor, and carpenter, Solazzi has once again taken a hands-on approach, documenting much of Gohan’s construction on social media.

Gohan will showcase Japanese cuisine using Pacific Northwest ingredients, featuring locally harvested seafood, oysters, Puget Sound uni, foraged kelp, and rice as the centerpiece of the menu. 

The concept will also incorporate subtle Italian influences, reflecting Solazzi’s own Japanese and Italian heritage. 

Throughout the build, Brian Solazzi has shared photos and videos of the work in progress, including concrete polishing, framing, and custom shoji screens crafted from reclaimed cedar.
