Biscuit Bitch is preparing to open its first new location since 2019, with plans to take over the former Wann Izakaya space at 2020 Second Ave. in Seattle’s Belltown neighborhood, according to the Business Journal.
Owner Kimmie Spice told What Now Seattle the restaurant is targeting an opening by the end of the year.
Founded in 2010 as a late-night weekend pop-up inside Caffé Lieto at Pike Place Market, Biscuit Bitch has grown into a Seattle breakfast staple known for its homemade biscuits, sausage gravy, locally roasted espresso, and unapologetically playful personality.
Today, the self-described “Trailer Park to Table” concept operates locations in Pike Place Market and Belltown.
After closing its Pioneer Square location in 2020, the company has continued producing its homemade biscuits and gravy from a commissary kitchen. “We were just waiting for the right opportunity to present itself again downtown,” Spice said.
The expansion marks a significant increase in size for the company. While Biscuit Bitch’s two current locations total less than 1,700 square feet combined, the new Belltown space will span 4,856 square feet, making it the brand’s largest location to date.
In addition to serving customers, it will operate as the company’s commissary kitchen and include two indoor dining rooms, two outdoor patios, and a private space for meetings and small events.
The expanded kitchen will also allow Biscuit Bitch to revive menu favorites that haven’t been available in years, including Collard Greens and Chicken and Dumplings. It will also introduce something entirely new for the company.
“For the first time in our 16-year history, we will have fryers!” Spice said.
Until the new location opens, Biscuit Bitch will continue serving its signature breakfast menu at its Pike Place Market and Belltown restaurants while preparing for its next chapter downtown.
