The local family behind Wild Goji Revolving Sushi & Bar is bringing a new restaurant to The Merc, according to the San Antonio Business Journal.
A filing with the Texas Department of Licensing and Regulation lists Sora Sushi from restauranteur Zengfu Zheng at 5734 UTSA Blvd., Suites 105-107.
Wild Goji has operated at 7115 Blanco Road since 2016 and later added its signature revolving sushi bar. The new project has been described as a technology-forward sushi and Asian dining concept.
State documents call for a 5,200-square-foot restaurant inside The Merc building. Construction is scheduled to begin August 15 and wrap up December 1.
Sora Sushi will join the first group of businesses announced for The Merc. The development expects its first concepts to begin opening in early 2027, though a specific opening date for Sora Sushi has not been announced.
The Merc is a $350 million, 112-acre development planned with apartments, restaurants, stores, and outdoor recreation near UTSA. Its first retail phase includes 35,000 square feet across three buildings.
What Now San Antonio reached out to the Sora Sushi team and will update this story as more information becomes available.
