Thistle & Thyme Bistro is preparing to open at 617 128th St. SW, Suite 104, in Everett. Jose Salgado told What Now Seattle that the team is targeting a late August opening.
The new restaurant will take over the former Ho Sushi Bistro space.
A recent application with the Washington State Liquor and Cannabis Board lists Ernesto Salgado Acosta, Janet Cervantes Salgado, Jose Salgado Acosta, and Mariana Francisco Asencio as applicants. The business is seeking a spirits, beer, and wine restaurant lounge license.
