After first breaking ground for construction over two years ago, The Monsaraz Hotel by Hilton has been slowly rolling out details as to what San Diegans can expect. The 60-seat, 2,800 square feet on-site restaurant will be known as Westerly Public House.

Complementing Monsaraz’s Portuguese inspiration, the Westerly Public House will feature coastal cuisine, fusing Australian flavors with Californian style. As explained on their website, “Both coastal havens have matching climates, surfing culture, clean living and a love for life, making this the perfect ethos for Monsaraz.”

As reported by SanDiegoVille.com on Friday evening, The Monsaraz Hotel has signed on Jesse Paul to serve as Executive Chef. Paul’s previous ventures have included owning The Wooden Spoon in Escondido and working as Chef de Cuisine at Carlsbad’s Vivace Restaurant in the Park Hyatt Aviara Resort.

In addition to Westerly Public House, other hotel amenities will include San Diego’s Dark Horse Coffee Roasters and a rooftop “Hideaway” bar.

The Monsaraz Hotel is co-managed by Hilton and RAR Hospitality, a San Diego-based consulting firm. The hotel has already begun accepting reservations for May, and construction appears to be moving quickly. Previously, the site was occupied by Dolphin Motel, and The Monsaraz has been working to completely reconstruct the property.
