La Tequila Jalisco Heads to Liberty Hill

The new La Tequila is a project several years in the making

“For months, Liberty Hill residents have been wondering what’s been going on at 13850 State Hwy. 29, where a rustic red barn stood for years before slowly being torn down,” said an article published by the Liberty Hill Independent. “It was last set to open as a furniture store—which never happened—and before that it was a wing restaurant and a barbecue joint. Now, the site is going to be home to a new 4,500-square-foot Mexican restaurant. The restaurant, La Tequila Jalisco, has five other locations around Texas, including in Kingsland, San Antonio, Fredericksburg, Rockport and Beeville.”

One key detail we should mention: that article was published in August 2022.

Three and a half years later, this week, What Now came across a TDLR filing for La Tequila Jalisco’s Liberty Hill location. The address given in the filing is 13800 W Hwy 29. It’s a new construction of a 3,400-square-foot restaurant to the tune of an estimated $800,000, with work expected to run from July 30 of this year until March 19.

In other words, plans for La Tequila Jalisco’s Liberty Hill location, despite some evident changes, appear to be coming to fruition.

The menu at La Tequila’s Kingsland location includes a wide range offerings, ranging from seafood dishes like Camarones a la Diabla (Spicy juicy shrimp sautéed in a bold, fiery diabla sauce made from a blend of dried chiles and spices, served with rice, beans & salad), to Combo Plates like the Texas Plate (A portion of tender carne guisada, slow-cooked in a savory gravy, served with two flavorful enchiladas, and a side of fresh guacamole for the perfect balance of flavors. Served with rice & beans).

Opening in the West State Highway 29 location, La Tequila Jalisco would join restaurants like Bella Sera, Liberty Hill; Dahlia Cafe; Mojo Coffee; and Liberty Hill Beer Market.

What Now reached out to co-owner Arturo Melendez on Wednesday to ask about plans for the Liberty Hill opening. Melendez was not immediately available for comment.
