Bethencourt Bakehouse to Open First Brick-and-Mortar Bakery in Acton

A popular Acton-area micro-bakery is opening its first permanent storefront specializing in European-style sourdough.

An artisan micro-bakery specializing in European-style sourdough breads and baked goods is opening a permanent home in Acton.

Bethencourt Bakehouse is preparing to launch its first brick-and-mortar location at 166 Great Road, according to a recent social media announcement from founder Gonzalo Condés De Bethencourt. The bakery launched as a small-scale operation in early 2025 and has since built a following through Saturday pop-ups at West Acton Village, appearances at local partner locations, and online preorder drops that regularly sell out.

“It turns out wild yeast isn’t the only thing that expands when you give it time and care,” wrote Gonzalo in the announcement. “A little over a year ago, Bethencourt Bakehouse started as an idea, a starter jar, and a passion for slow-fermented, European-style bread. Today, I’m holding the keys to our very own brick-and-mortar home at 166 Great Road in Acton, Massachusetts.”

Gonzalo grew up in Madrid, Spain, where fresh bread was an everyday part of life. He later moved to Los Angeles and Amsterdam before settling in the Boston area with his family in 2016. Missing the crusty, flavorful loaves he knew from Europe, he began teaching himself the art of sourdough baking.

What started as an experiment eventually became a decade-long pursuit of and passion for the craft. Gonzalo studied breadmaking at baking institutions in the U.S. and Spain and trained alongside several master bakers, developing a particular focus on naturally leavened bread, traditional European techniques, and long fermentation. Today, he sources organic wheat berries and mills his own flour as part of the bakery’s approach to carefully made, small-batch bread.

The micro-bakery’s current lineup includes a variety of sourdough loaves and artisan breads, from classic sourdough, rye, and focaccia to more inventive flavors such as Cheddar & Jalapeño, Everything Bagel, and Rosemary & Olive. Additionally, weekly specials have included combinations like Smoked Gouda with Roasted Onions, Figs & Red Wine, and Fire-Roasted Peppers with Garlic & Italian Seasoning.

Beyond its signature breads, Bethencourt Bakehouse has been known to offer laminated sourdough pastries and other baked goods, such as cookies and muffins. The full menu for the new storefront has not yet been released, though guests can expect a similar lineup at the brick-and-mortar bakery.

Buildout is officially underway, and Gonzalo said in a comment that he hopes to open Bethencourt Bakehouse in time for Thanksgiving 2026, pending permitting and renovations.

“To say thank you feels like an understatement,” he continued. “The incredible warmth from our local community, the loyal lines at pop-ups, markets and drops, and the generous support of our friends at Eve & Murray’s helped turn a humble bake setup into a permanent storefront.”
