A new rooftop dining concept is headed to Cherry Creek this summer from the team behind acclaimed restaurants The Wolf’s Tailor and Beckon.
Chef Taylor Stark and Id Est Hospitality Group founder Kelly Whitaker are planning to open Sheep on the sixth floor rooftop of the Clayton Hotel & Members Club at 233 Clayton Street.
It will be a three month residency, from July to October according to Westword. Last year, The Wolf’s Tailor became Colorado’s first restaurant to earn two Michelin stars.
Guests can expect a nightly four-course menu with multiple choices, offering a different experience from The Wolf’s Tailor’s tasting menu. The menu was designed by Whitaker and chef Taylor Stark.
In an Instagram post Whitaker said he hopes people visit Wolf’s, but also join Sheep regularly throughout the summer. “So we thought about the price and fluidity of the menu. Same integrity, same sourcing, but abbreviated. It’s not a copy of Wolf’s, nor a permanent new restaurant. A more direct expression of the same world.”
“The Wolf’s Tailor menu right now is our most ambitious menu we have created, and I’m incredibly proud of the work and the team, so don’t skip it this summer. Both menus will progress throughout the season and only evolve, two different spaces, two different parts of the story, same core belief,” he said.
