Mixed Fillings Pie Shop is preparing for a new chapter in Jacksonville’s Riverside neighborhood, where the business will launch a café concept inside Happy Medium Books + Café at 2756 Park St.
Chef Natasha Burton, founder of Mixed Fillings Pie Shop, confirmed the plans in an email to WhatNow Jacksonville, clarifying the purpose of a project filing dated Oct. 20, 2026, that listed the business at the Park Street address.
The new concept will bring together Mixed Fillings’ handcrafted pies, a curated café menu and Solune coffee in a space centered around books, creativity and community.
“After closing our downtown Adams Street location, we’re preparing for an exciting new chapter that brings together our handcrafted pies, a thoughtfully curated café menu, and Solune coffee in a space centered around books, creativity, and community,” Burton said.
The business is currently working through the permitting and construction process and has not announced an official opening date.
“I’m happy to confirm that the filing at 2756 Park Street is for our new café concept inside Happy Medium Books + Café in Jacksonville’s Riverside neighborhood,” Burton said.
The move marks a new direction for Mixed Fillings, which has built a following for its handmade sweet and savory pies. Rather than opening another traditional pie shop, the concept will bring the brand’s offerings into a setting that combines food, coffee and books.
“We’re especially excited about the opportunity to grow within the Riverside community and create something that goes beyond a traditional pie shop,” Burton said.
While preparations continue at the new location, customers can still find Mixed Fillings pies at the business’s Pie Pantry inside L’Artisan Market, located at 2626 Park St. in Jacksonville.
Founded by Burton, Mixed Fillings has earned national recognition for its pies. The shop ranked No. 3 in USA Today’s 10Best readers’ poll of the country’s best pie shops in 2025 and No. 7 in 2026.
Further details about the café’s menu, construction timeline and opening date have not yet been announced.
