H. Valley is opening its doors in New York this week. The new neighborhood market is inspired by the Hudson Valley and will offer food and provisions for everyday use. Its offerings will include seasonal produce, pantry staples, ready-to-cook proteins, and prepared foods.
H. Valley to Open in New York’s West Village
Chef Austin Johnson and restaurateur Eytan Sugarman are opening H. Valley on September 23. The spot will open at 569 Hudson Street in the West Village.
Inspired by the Hudson Valley, the market will offer prepared foods, seasonal produce, groceries, and ready-to-cook meals. Its offerings will include breakfast, lunch, and dinner items, along with coffee, pastries, and groceries. Produce will come from regional farms, including Campo Rosso Farm, Norwich Meadows Farm, Eckerton Hill Farm, and Migliorelli Farm.
The market will also sell prepared proteins such as ribeye, salmon, sesame tuna steaks, and crispy duck legs. Other products include pasta sauces, soups, broths, fresh and frozen pasta, lasagna, pizza, and cookie dough. The market will also offer a dog-food line called Dion’s Diet, made with ingredients like Hudson Valley brook trout, Bell & Evans chicken, and Long Island duck breast.

What H. Valley Will Offer
The market serves breakfast items such as bacon, egg, and cheese sandwiches, egg-white breakfast sandwiches, pastries, bread, coffee, and matcha. On weekends, Johnson will bring the omelette bar he previously offered at Rigor Hill Market.
Lunch includes sandwiches such as turkey, pork, roast beef, grilled chicken, and tuna salad. The grab-and-go section will offer prepared foods, including rotisserie chicken, grilled fish, roasted potatoes, and seasonal vegetables.
The 24-seat market was designed by Amanda Johnson, Austin Johnson’s wife. She also sourced antiques for the space and designed its merchandise. A children’s area called “Lucky’s Corner” includes an aquarium, stools, crayons, and custom coloring books. The market will also offer catering, with private dinners, culinary events, chef collaborations, and pop-ups planned for the future.
H. Valley will also host a farmers market every Friday from 8 a.m. to 2 p.m. It will initially operate Wednesday through Sunday from 7 a.m. to 8 p.m., with plans to expand to seven days a week. Farmers and makers from the Hudson Valley will participate in the weekly market.
