Mediterranean fast-casual chain Panini Kabob Grill is expanding rapidly, with several new locations listed as in development. Its website advertises that Eastvale is part of its upcoming growth, with a location expected to open there next year — but an address isn’t available yet.

Founded in 1997 in Corona Del Mar, the chain now operates 30 locations throughout California. Panini Kabob Grill’s current locations span a large portion of SoCal, including Orange County, Los Angeles County, San Diego County, Kern County, and the Inland Empire.

Las Vegas, Chandler, Norwalk, Downey, and Hollywood Park are in the works, along with Aliso Viejo, which What Now OC covered recently. The company is also building its own “digital kitchens” to capitalize on the fact that 67% of its business comes from takeout and catering, SFGATE reports.

The chain specializes in scratch-made Mediterranean dishes, prepared daily. Grilled chicken and beef kabobs, salmon, organic tofu, paninis, pastas, and house-made sauces and dressings are the menu’s simple staples.
