A popular North County restaurant known for its organic, seed oil-free menu is preparing to expand into San Marcos. Haggo’s Organic Taco has recently submitted plans for a new restaurant at 222 North City Drive in San Marcos, according to records filed with the San Diego County Department of Environmental Health. The application is currently listed as “Plan In-Review.”
The incoming restaurant will occupy approximately 2,898 square feet at the growing North City mixed-use development, a master-planned community bringing new opportunities for retail, residential and 25 acres of parks and open space. It’s expected to open by the end of the year.
Haggo’s Organic Taco is owned by husband-and-wife team Courtney Lattimer Andruss and Willie Andruss, who took over Haggo’s in 2021, a company announcement states. They previously operated KEESH, a healthy crustless quiche concept they ran at the Leucadia Farmers Market.
Courtney has over 15 years of experience as a local chef, with a focus on organic cooking and dietary restrictions, while Willie is an Encinitas native who aids with operations.
Diners at Haggo’s can choose from a menu of scratch-made tacos, burritos, bowls, salads and other Mexican-inspired fare. Everything is made 100% seed oil-free and cooked with avocado oil, organic produce, grass-fed beef, free-range organic chicken, wild-caught seafood, room-to-roam pork, and non-GMO, glyphosate-free ingredients.
