According to a recent press release, “a stunning transformation is underway at Wine & Roses, ushering in a new era for the beloved wine country retreat, which will debut as Appellation Lodi – Wine & Roses Resort and Spa in late spring 2025.“
“Appellation – the culinary-first hospitality brand co-founded by celebrated American chef Charlie Palmer and luxury hospitality veteran Christopher Hunsberger – to guide the resort into its next chapter,” the statement continues.
The concept’s culinary program will be managed by Chef Charlie Palmer, Chef Thomas Bellec, Appellation’s Chief Culinary Director, and Executive Chef and Food & Beverage Director Marco Fossati — and will feature “two signature Charlie Palmer dining concepts and a complete revitalization of culinary landscaping and programming.”
When asked about the restaurants, Hunsberger tells What Now San Francisco, “We have rebranded the first one, it’s actually reopened now… Maison Lodi and it’s really been elevated… We introduced a full rotisserie in there.”
The second hasn’t been renamed yet but was formerly known as the Town Restaurant, and will open at the beginning of May. “We’ll be expanding the space and the bar and the wine offerings, beyond what was already a very good wine list,” he shares.
