It looks like the owner of Diego is preparing his new restaurant Trino in West Loop.
The restaurant will be opening at 738 W Randolph Street. It will be in place of the Japanese restaurant Komo which will be closing. It will be a steakhouse, but the menu has not yet been released.
According to an article from Eater Chicago, the restaurant is being hosted at Soho House at 113-125 N Green Street, and they will be having pop-up events from June 20-28.
“Steakhouse indulgence reimagined by the team behind 5 Suenos,” says the description on their website. The restaurant is currently letting people book tables for their opening.
Chef and owner Stephen Sandoval told What Now Chicago he is looking to open by late July. He currently owns the restaurant Diego at 459 Ogden Avenue, another Mexican restaurant. Sandoval holds his Mexican roots dear with his cooking inspired by Baja flavors, and it will also have flavors from Galicia, Argentina and Chicago.
At the location, he will also have a “seafood tower,” according to the Eater Chicago article. This will be a stack of different seafoods with special dipping sauces, including cocktail sauce.
Cocktails will also be served at the location, including martinis and cocktails with flavors based from the mentioned regions. He is working with his beverage director Carolina Gonzalez who makes drinks at Diego.
