Chicago Welcomes Labriola Italian Specialties

Baker and restaurateur Rich Labriola is opening Labriola Italian Specialties in Chicago. The restaurant is scheduled to open April 24, 2026, at 852 W Fulton Market. The restaurant will feature Labriola’s award-winning pizza, house-made pasta, fresh bread, and desserts.
The concept reflects Labriola’s focus on Italian cuisine and hospitality. It aims to create a welcoming neighborhood gathering place that is ideal for Chicago’s dining scene.
“Labriola Italian Specialties is the culmination of everything I love about Italian food and hospitality,” said Rich Labriola, founder of Doughboy Restaurant Group. “From pizza and pasta to the walk-up cannoli window, we want this space to feel like a true gathering place in Fulton Market — fun, welcoming, and built on quality. It’s about honoring tradition while creating something fresh and exciting for Chicago.”
Rich Labriola began his career in his family’s pizza shop. He later built a wholesale bakery business and went on to open concepts including Labriola Café. He partnered with Stan’s Donuts to expand the brand in Chicago.

The new restaurant is part of Doughboy Restaurant Group’s ongoing growth. The company employs over 600 people and continues to expand across Chicago. The new restaurant will be open from 4 p.m. to 11 p.m. from Sunday through Thursday and until midnight on weekends.
Menu Highlighting Italian Flavors

The menu at Labriola Italian Specialties blends classic Italian flavors with a modern Chicago touch. Guests can enjoy craft cocktails, wine, and late-night offerings at the restaurant. This includes pizza by the slice and cannoli made with sheep’s milk ricotta.
Guests can also opt for spumoni from the walk-up window. The concept is designed to serve both daytime and late-night diners.
Design That Sets an Upscale Vibe
Heidi Lightner Architects designed the space. It will shift from a bright daytime setting to a more moody, upscale feel at night. Labriola Italian Specialties will seat over 100 guests.
The space has an additional bar and outdoor seating. There is an open kitchen that is centered around pizza ovens. The design celebrates the dual personality of Fulton Market, which is both playful and vibrant.
The restaurant is set to bring a fresh dining experience to Fulton Market. It will also further strengthen Doughboy Restaurant Group’s growing footprint in Chicago’s culinary scene.
