Piada Italian Street Food, the fast-casual chain known for its hand-rolled Italian flatbreads, plans to bring a new location to Rowlett. According to public filings, the restaurant is planned for Suite #100 at 2700 Lakeview Parkway, with a construction completion date targeted for November 2026.
What Now Dallas reached out to Piada representatives to inquire about an opening timeline, but did not receive an answer prior to publication.
The Rowlett location would mark another entry into the Dallas-Fort Worth market for the brand, which already operates several North Texas locations, including spots in Dallas, Plano, and Fort Worth. Lakeview Parkway is a busy retail corridor near Lake Ray Hubbard, putting the new restaurant within easy reach of Rowlett’s growing residential base along the U.S. 66 and I-30 corridors.
What Now has tracked Piada’s steady march across North Texas for years, from its first Plano location on Coit Road to its unexpected debut inside DFW International Airport, the brand’s first U.S. airport storefront. The chain has also expanded into Euless, and What Now’s Austin, Houston, and San Antonio teams have covered a wave of new outposts in Pflugerville, Leander, Pearland, Katy, and Greater San Antonio — evidence of just how aggressively the brand is growing statewide.
Piada’s concept traces back to a 2010 trip to Rimini, Italy, where founder Chris Doody found inspiration in the city’s street food carts and family-run corner markets. That trip led to a menu built around hand-rolled piadas, chopped salads, and tossed pastas, all prepared by chefs working an open kitchen rather than a traditional back-of-house crew.
Since opening its first restaurant that year, the chain has grown to roughly 60 locations across seven states, including Ohio, Indiana, Texas, Minnesota, Kentucky, Pennsylvania, and North Carolina.
