Chipotle announced this week it has been working on a new model of restaurants that will be environmentally friendly. Two pilot locations have already opened in the U.S. and a third is coming to 5954 Promenade Pkwy in Castle Rock this fall, the company told What Now Denver.
The burrito and bowl brand is emphasizing sustainability with new restaurant designs that use 100% renewable energy as a part of its goal “toward its science-based targets…to reduce direct and indirect greenhouse gas emissions 50% by 2030 compared to a 2019 baseline,” the press release said.
“With our aggressive development goal in North America, we hold ourselves accountable to reduce the environmental impact of our restaurants. We are aiming to incorporate some elements of our responsible restaurant design into many of our new restaurant openings going forward,” Chief Corporate Affairs Officer Laurie Schalow was quoted as saying.
In addition to being run on wind and solar energy, the “responsible restaurant” location will have cactus leather chairs and decor made from recycled rice husks. The establishment in Castle Rock will also have a Chipotlane, a digital order drive-thru pick-up lane. The site is near several other popular eateries like In-N-Out Burger, Panda Express, and Fuzzy’s Taco Shop.
