Boulangerie Le Toledo, a Montreal-based artisan bakery known for its handcrafted breads and pastries, is preparing to open a new location at 1479 Laurier East in Montreal.

The company’s third location is set to open on April 29, according to an Instagram announcement. The new bakery joins existing locations at 351 Avenue du Mont-Royal East and 4448 Wellington Street in Verdun. The business was founded by Richard Arnoult and François Barriere, who opened the first Le Toledo location in Montreal’s Plateau neighborhood in 2019. Customers can expect the same focus on fresh-baked pastries, sourdough breads, and signature items like its cheese croissant.

Le Toledo has grown steadily since its debut, building on a concept centered around artisanal baking and daily production. The bakery emphasizes high-quality ingredients, including Quebec-grown, organic, and sustainably sourced flours. Long fermentation processes and sourdough techniques remain central to its approach to flavor and texture.

The Laurier East location continues the brand’s expansion into dense, walkable Montreal neighborhoods. The Plateau and Verdun shops have built strong local followings with bread, pastries, cakes, and coffee offerings. Each location is designed as a neighborhood bakery space focused on daily service and fresh production.

Founded with a long-term vision dating back to the early 2000s, Le Toledo was built on the goal of becoming a standout bakery brand in North America. The first location was opened in the Plateau despite nearby competition, reinforcing its focus on establishing a strong identity in key urban areas.

The bakery’s signature cheese croissant remains one of its most recognizable items, made with all-butter puff pastry and topped with Swiss cheese. The product reflects the brand’s approach to balancing traditional baking methods with distinctive offerings. Le Toledo’s growth reflects continued demand for artisan bakeries in Montreal’s core neighborhoods.
