A new chicken restaurant concept is coming to the Julian Mountains, as a new eatery coined Dub’s Chicken Shack prepares to open at 4354 Highway 78 in Santa Ysabel. According to San Diego County Environmental Health permit filing records, the restaurant is taking over the spot that was home to Jeremy’s on the Hill for almost two decades.
The application, filed last week, describes the space as a 2,200-square-foot facility that will have approximately 15 employees. While details about the venture are scarce, documents from Bizapedia show the company was formed as an official California corporation in March 2026.
Randall Paul White is listed as the registered agent and sole principal on record. White’s LinkedIn shows he has a longstanding history in the F&B business, spending more than 15 years with Dave & Buster’s and nearly a decade as a general manager with Buca di Beppo. He studied Restaurant, Culinary, and Catering Management at The Culinary Institute of America.
White could not be reached for comment prior to publication.
The arrival of Dub’s Chicken Shack comes after Jeremy’s on the Hill permanently closed in February 2026 after 17 years in business. The family-owned restaurant was one of the area’s most recognized dining destinations.
