New Tavern Debuting in the Arboretum of South Barrington

Greggory Hearth and Tavern is expected to open in late 2023

A brand new restaurant called Greggory Hearth and Tavern is coming to South Barrington, located at 100 W Higgins Rd.

The newest venture from Gregg Horan and Bill Veremis is moving to the Arboretum of South Barrington shopping center in late 2023, according to Eater Chicago. Horan has spent the past 26 years as a managing partner of Gibsons Restaurant Group, while Bill Veremis spent two decades as a managing partner at the now-closed Rosewood Restaurant Group. They are bringing in former RPM Steak executive chef Eddie Ishaq to run the kitchen, which will include a hearth for live-fire cooking.

“We’re excited to do some whole fish and a variety of seafood,” Horan tells Eater. “We’re going to have fine steakhouse cuts for sure but also a focus on other roasted meats. The last restaurant I opened was Bazaar Meat and Bar Mar, and I really loved some of the tableside presentations that we did there. The steak tartar in particular comes to mind. We definitely plan on doing some tableside presentations as a differentiator for the suburbs.”

When the restaurant opens later this year, customers can expect an open kitchen that will add to the aesthetic design. The owners plan to focus on outstanding sourcing, working with small farms for steak, and flying in fresh fish daily. The 10,000-square-foot location will feature 3,000 square feet of private event space for parties of 80 to 100. Horan is also considering opening additional locations or starting his own restaurant group. Initially, the owners planned to open the restaurant in a much smaller space.

“We were originally looking for about 7,000 square feet, but this building just turned out to be a great opportunity for us,” Horan says. “We have challenges, and we’re going to have to confront that with the design and in some respects. You’re going to have quieter days in South Barrington in February on a Monday, you’re going to have to figure out a way to make the dining room feel attractive, crowded, and active.”
