Let’s Toast debuted its permanent Uptown Plaza location on May 16 at 100 E Camelback Rd #164 after spending the last three years operating as a pop-up and becoming a regular fixture at the Uptown Farmers Market.
Founded by Sumin Kim and Sean Atkinson, Let’s Toast has ambitions beyond its first storefront. According to Phoenix New Times, the owners envision several locations, with franchising also part of the brand’s long-term conversation.
The concept specializes in Korean-inspired sandwiches built around house-made shokupan, or Japanese milk bread. The menu includes Korean BBQ sandwiches, breakfast offerings and the popular Bulgogi Cheesesteak, pairing savory marinated meats with fluffy bread and house sauces.
Kim brings restaurant roots tied to Seoul’s food scene, while Atkinson helped shape the business after the pair returned to Arizona and began testing recipes at markets and festivals across the Valley.
The transition into a permanent restaurant drew strong community support.
Following its grand opening, the team thanked customers who waited through long lines and heat to visit the new location, reflecting the loyal following Let’s Toast built during years of pop-ups and market appearances.
For now, the team is focused on establishing its Uptown restaurant while positioning the brand for future growth and potential expansion across the Valley.
