PopUp Bagels, a fast-growing bagel brand known for serving hot, whole bagels with rotating cream cheese flavors, is getting ready to open new locations in San Diego’s North Park neighborhood at 3727 30th Street and in Encinitas at 1044 S Coast Highway 101.
The company recently submitted documents to the San Diego County Department of Environmental Health and Quality for the Encinitas location, according to county records. The North Park location is planned as part of the upcoming Amani San Diego development, while an opening date has not been announced for either location. What Now reached out to local franchise owners Griffin Thall and Paul Goodman for additional information, but the company’s public relations team said it was unable to provide further details at this time.
The North Park location will be part of a new retail and cafe space at 3727 30th Street, with approximately 911 square feet of space, a built-in restaurant setup, and a grease trap. The space may also include patio seating. The property is located beneath 78 residential units and near additional residential development throughout North Park.
The Encinitas location will be located along South Coast Highway 101, a commercial corridor with restaurants, cafes, shops, and other businesses. The addition would give PopUp Bagels another location in North County, following its expansion into the San Diego area. Thall and Goodman previously announced plans to open multiple PopUp Bagels locations throughout San Diego County.
PopUp Bagels was founded by Adam Goldberg in Westport, Connecticut, and has since expanded into a growing national brand. The company focuses on serving bagels fresh from the oven, with customers encouraged to eat them whole rather than as traditional bagel sandwiches. The menu includes a variety of freshly baked bagels served with cream cheese spreads and other toppings.
The brand’s signature approach, known as “Grip, Rip, and Dip,” encourages customers to tear apart their hot bagels and dip them into cream cheese. Popular options include classic bagel varieties along with rotating schmears featuring different flavors. The North Park and Encinitas locations would add to PopUp Bagels’ growing presence in San Diego County, where the company has plans for multiple locations in the coming years.
