An anticipated development comes with a Mexican restaurant’s expansion.
Calixto Mexican Grill is delivering authentic fajitas, burritos and tortas to the upcoming Minock Park Place development. This marks two years since the grill opened in Livonia at 29102 Five Mile Road. Owner Enrique Aquino told What Now Detroit he and the team will debut the restaurant close to the opening of the development, around the end of July or August.
Aquino has wanted to expand since he opened his first restaurant, looking at the west Detroit area as well as Livonia. As the Rosedale Park Historic District is developing, he saw it as a great opportunity to help the area with economic growth.
“It was a call for us,” Aquino said.
Calixto’s new address will be only a 12-minute drive from the Livonia location. Aquino is creating a larger kitchen at this space, with the vision of creating a satellite kitchen program for aspiring chefs. He wants to support the community in any way he can.
The Grandmont-Rosedale location will offer many of the same favorite “a la carta” options. In the past, Aquino has seen success with the fajitas, customizable to add chicken, fish, pastor ground beef or carnitas. Plates include chimichangas, quesabirrias, lunch specials with two tacos and beans, tamale plates and enchiladas.
“There’s something for everybody,” Aquino said.
The $20 million development is under construction at the intersection of Grand River Avenue and Minock Street. It will also include 42 senior housing units and additional commercial space. Concepts nearby include Miss Eva’s Detroit live music bar and Rosa cafe. This will be one of the few options in the area.
